Discover the art of sausage making with a small goods appreciation course at Ida Red in Macedon with Uncle’s Smallgoods.

Uncle’s Smallgoods has been producing traditionally wood smoked hams, bacons and sausages for over 20 years. Proud to be doing things the old fashioned way; by hand using time honoured methods, real Australian hardwood smoke, only natural and local ingredients with an uncompromised approach to freshness. Free range pork will be provided by the Farmers Larder in Daylesford.

The experience:
Discover the world of smallgoods, smoking and sausage making with the boys from Uncle’s.
Learn how to pump out sausages under the supervision of Uncle’s head Smallgoods maker.
Enjoy a smallgoods degustation sampling how various preparation techniques, smoking methods impact taste and texture.
Finish with a smallgoods inspired meal that pays homage to Uncle’s eastern European roots.
Hear from local free-range farmers who will be supplying the pork.
Take home your own fresh sausage and Salumi and a voucher to Uncle’s Smokehouse Delicatessen in Dandenong.

Cost – $160 per person which includes participation in sausage and salumi making course, coffee or tea on arrival, antipasto platters and wood fire oven pizza with sausage and or salumi.
