Wombat Forest Gluten Free Lemon Tart

Wombat Forest winery is a surprise package nestled in the Wombat Forest at Denver.
We are passionate about the local area with its rich fauna and flora. We’ve always been keen to establish a family vineyard and winery on our property as our soils and climate are conducive to cool climate viticulture.

Our first plantings were in 1997. We planted two varieties of Pinot Noir and a small amount of Cabernet Sauvignon. Our vineyard has a northerly aspect with a large dam at the base of the valley to assist with drawing frost away from the vines in winter and spring.
We produce handcrafted wines paying particular attention to detail. The extended ripening period enhances the fruit flavour and provides subtle tannins. All our reds are aged in French Oak barrels producing award-winning elegant cool climate wines. The soil type varies from volcanic on the hills to sedimentary in the valley.

Our family history extends back to the early settlement of the area in the mid-1800s. We have an “Early Settler” theme because our family has occupied and farmed locally. We are situated on the edge of the Wombat Forest, “the jewel of the district”. Denver is a beautiful pocket of the Wombat Forest with stands of manna gums, stringy bark, wild cherry, blackwood and peppermint. There are 3 dams on the property with scattered stands of trees and a diverse range of wildlife including echidnas, koalas, and wombats. Local bird varieties include; yellow robins, rosellas, kookaburras, currawongs, blue wrens, boobook owls, and wedge-tailed eagles.

We are only 10 minutes from the Trentham Village, 15 minutes from Kyneton and Daylesford, 50 minutes from Bendigo and Ballarat, and 1hr 10 minutes from the Melbourne CBD.

Twenty-six years later we continue to provide genuine country hospitality in a natural bush setting. Our winery, tasting rooms, and event space are nestled on the top of the ridge overlooking the valley with majestic views of the Wombat Forest creating the backdrop for any occasion.
